Stuffed bell peppers with:
ground turkey
avocados
yellow squash
chives
basmati rice
cheese

To make them look great, I recommend making the rice and turkey in pans separately from roasting the peppers in the oven.

Use your judgement on what kind of cheese you prefer, I like mozzarella because it is fodmap friendly and ic diet friendly. And if you prefer brown rice—go for it! Add plenty of salt and pepper to taste.
