Blueberry paleo mini-muffins that my kids ACTUALLY liked!!!
Using Bob’s Red Mill Paleo baking flour (@sprouts) following the directions for muffins on the back (see below). For icing I added some coconut cream mixed with maple syrup and vanilla extract.
1 cup of full fat coconut cream (just the hard part on top)
3 tbps maple syrup
1/2 tsp vanilla extract
Whip together to combine ingredients
Paleo mini-muffins, recipe courtesy of Bob’s Red Mill paleo baking flour:
3 3/4 cups Paleo flour
1 tsp Baking Soda
1/2 tsp Salt
3/4 cup Coconut Oil, melted
3/4 cup Honey or Maple Syrup
1/3 cup of Water
1 cup of Bluberries
Preheat to 350 degrees. Grease muffin pan. Combine flour, baking soda and salt, set aside. In another bowl, whisk eggs, coconut oil, maple syrup/honey, and water. Add mixes together and mix thoroughly. Add blueberries now. Heat for 20-25 min for full size muffins, 10-15 min for mini-muffins and make sure a toothpick inserted comes back clean.
