Whether breakfast, brunch, lunch, or dinner, I’m always down to eat eggs and (turkey) bacon.
This brunch includes a sweet potato/squash/red pepper hash, plus sunny side up eggs and some turkey bacon and avocado to keep me fuller, longer.
Visit Sprouts or Whole Foods for some no sugar turkey bacon options, there are plenty available now.
Spray pan with avocado oil
Add one sweet potato cut into 1/2 to 1 inch pieces. Saute for 5 minutes on high.
Add in cut yellow squash and red bell pepper and spray some more avocado oil to keep from sticking.
Cook on med-low until everything is browned up nicely and the potatoes are no longer hard (10 min approx)
So the thing about sunny side up eggs is that I do not like a runny egg white. So I cook my sunny side up eggs until the whites are fully formed and even have a crisp on the edges.
Heat pan on high for 3 minutes until hot. Turn down to a low-medium heat and spray your pan with avocado oil spray.
Add the eggs, should be sizzling. Let them cook for 5 minutes or until your desired egg preference has been reached. Use care transferring to the plate so that you do not bust the egg yokes.
I choose turkey bacon over pork bacon for many reasons. In pranic healing it is a well known fact that pork, eel, and catfish have dirty red energies when seen clairvoyantly. I try to stay energetically clean where I can and I avoid pork altogether. Plus I try my best to not eat mammals for animal welfare reasons. But to each your own, I’m not one to judge so go with what suits you best.
