Pumpkin Pie Energy Bites

These pumpkin pie energy bites were adapted by a recipe posted on Instagram by @_cavemandiet_forme

I did change a few things about their recipe, so what follows is a variation and not the same recipe.  For instance instead of using pecans, which are not ic diet friendly, I used walnuts.  I also omitted vanilla extract.

1 cup pitted Medjool dates
1/2 cup walnuts
1/3 cup pumpkin puree
1/4 cup unsweetened coconut flakes
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground cloves
Pinch of salt

Dates should be placed in a bowl of water and covered for 10 minutes to soak then drain.  Place nuts into a food processor and pulse until ground finely.  Chop the dates into small pieces.  Add the rest of your ingredients into the food processor and pulse until combined.

If you want to form these into balls you should place them in the freezer for 30 minutes at least before rolling them and then keep them in the fridge there after, so they are firmer.
