Check out these scones two ways, one for the paleo dieter on the left and one for everyone else on the right (still gluten free).  These are good for anyone who follows the fodmap diet as well as the ic diet

Recipe
2 cups Paleo flour like Bob’s Red Mill Paleo flour (or any other gf flour)
2 tbsp coconut sugar
1 tbsp baking powder (unless already added in flour mix)
1 tsp ground cinnamon
1/2 cup coconut oil
1/2 cup almond or coconut milk
1 large egg

Paleo (left side)-
1 cup chopped dates
1 cup chopped walnuts

GF apple walnut (right side)-
1 apple peeled cored and grated
1 cup chopped walnuts

400 degrees
Whisk flour, baking powder, cinnamon and sugar in bowl, add melted oil and mix. Add in walnuts and apples/dates and make sure they are covered with the flour.

Combine egg yolk and milk then mix into flour mixture.

Add some extra flour to surface and knead the dough 2 or 3 times. Flatten it out to about 1/2 inch with a rolling pin or your hands. Cut the scones into whatever shape you like.

Another bowl mix egg white and 1 tbsp water together and coat the top of the scones, bake 20-22 min.

For a simple glaze, combine 1/2 cup powdered sugar (sub coconut sugar or maple syrup for paleo), 1 tsp cinnamon, and 3 tbsp coconut cream (the harder part), whisk together and coat scones after baked.
