Chewy Oatmeal Cookies, dairy free, gluten free, fodmap friendly!

I was really craving some oatmeal cookies, and most recipes involve gluten, so I had to come up with my own version.  I used Bob’s Red Mill Steel Cut Oats for this recipe, and they ended up being a perfectly chewy and satisfying.
When using palm oil it’s crucial to select a brand that is sustainable and organic.  If you can’t find this, then please just use ghee or switch to coconut oil.  You can search Amazon for brands that are safe, or your local Whole Foods/Sprouts may carry some options.
Chewy Oatmeal cookies
1/4 c ghee
1/2 c palm oil
1/2 c maple syrup
1/2 c maple sugar
1 1/2 tbsp cinnamon
1/2 tsp baking powder
1/4 tsp baking soda
2 c steel cut oats
1/3 c blanched almond flour
2/3 c coconut flour
2/3 c chopped walnuts
2/3 c chopped dates
Preheat over to 350 degrees.
In a bowl mix ghee, palm oil,maple sugar and syrup, baking soda and powder, and cinnamon with a hand mixer. Add eggs to mixture. Add your flours one at a time until combined.
Using a spatula mix in oats, walnuts, and dates. Spoon onto parchment paper, push down to flatten them only as much as they are no longer a domed ball, they will sink down more on their own in the oven.
Bake 12-15 min until golden brown along edges.
