Spaghetti squash is notoriously hard to cut into, so before you start roasting it, try microwaving it for about 5 minutes. Once it is out you can more easily cut it in half to place in the oven for roasting!
I roasted my spaghetti squash in the oven at 400 degrees for approximately 25 minutes. Keep it in until you see some browned edges. Let it sit and take a form to it to begin scrapping the inside for spaghetti looking squash noodles. Or simply place your stuffing inside and scoop it out as you go.
In my squash I added some chicken that I grilled, with some sauteed spinach, red bell pepper, salt and pepper. Topped with fresh chopped green onions.
