Banana Pudding, Paleo/Whole30 Style

3 egg yolks
1 can of full fat coconut milk
1/2 cup of ghee
1/3 cup tapioca flour
1 cup of maple sugar
2 bananas, mashed
Chopped walnuts and/or coconut cream for topping if desired

This paleo banana pudding will satisfy your craving for pudding, and no need to wait until it cools because it is even better warm!

In a saucepan on low-med heat, combine coconut milk, ghee, tapioca flour and maple sugar. Using a whisk, stir constantly until the mixture thickens into the pudding consistency you know so well. Have your 3 egg yolks in a bowl nearby, add a half cup of your pudding mixture and quickly whisk to allow your eggs to acclimate to the heat without cooking. You can now add the eggs to the pudding and continue to whisk for 1 minute and take off the heat to let cool. Mix in your mashed bananas and toppings and enjoy!
