Stuffed Dates- Holiday Appetizer

These stuffed dates are easy, pretty, and Paleo/Whole30 compliant!

10 dates
2 tbsp ghee
2 tbsp almond butter
1 tbsp sesame seeds
1 tbsp chia seeds
1 tbsp hemp seeds
1 tbsp coconut flakes

Start by taking your dates, I got Mejoul dates, and placing them in a bowl of water for about 10 minutes.  This will allow the skin to soften, making the dates more juicy and easy to eat.  Dry off the dates and start to open them up, don’t cut all the way through, only on the top half.  If your dates are pitted, remove them at this time.

Combine your desired mixture of seeds and coconut flakes.  OR you can use cacao pieces.

In a small saucepan, or in a cup for the microwave, add almond butter and ghee.  Melt.

Place the pecans or walnuts into the dates.  Dip the bottom half into the almond butter and ghee.  Then roll them around in your seed mixture.
