Gnocchi with Sautéed Veggies and Turkey Bacon

This was easy, I sautéed everything in one pan. I have some chopped eggplant and red bell pepper which needs to saute with avocado oil, s&p for about 7 minutes. Add in frozen paleo gnocchi (I used @cappellos paleo but you could also use some cauliflower gnocchi). The key to getting crispy gnocchi is to make sure there is enough avocado oil in the pan to sauté it, heat it all the way up almost like you are frying something and throw them in! They cooked for about 3 minutes. Then add in some fresh spinach at the last minute. I topped it with extra crispy turkey bacon.
